Kashmiri Tea, also known as "Noon Chai" or "Gulabi Chai," is a fragrant and flavorful tea from the Kashmir region. It’s known for its beautiful pink color, unique taste, and rich aroma. This authentic recipe will guide you through creating the perfect cup of Kashmiri tea at home.

Ingredients:

  • Kashmiri green tea leaves – 2 tablespoons
  • Cold water – 4 cups
  • Baking soda – ¼ teaspoon (for the pink color)
  • Salt – ¼ teaspoon (optional, traditional Noon Chai)
  • Whole milk – 2 cups (for a creamier texture)
  • Cardamom – 2-3 pods (crushed)
  • Cinnamon stick – 1 small piece
  • Crushed almonds and pistachios – 2 tablespoons (for garnish)
  • Sugar – to taste (optional for sweeter flavor)

Instructions:

  1. Boil the tea leaves
    In a large saucepan, add 4 cups of cold water and the Kashmiri green tea leaves. Boil the mixture on medium heat until it reduces to about half, giving a strong tea concentrate.

  2. Add baking soda
    While the tea is boiling, add ¼ teaspoon of baking soda. This step is crucial for achieving the distinct pink hue of Kashmiri tea. Stir the tea vigorously to create froth.

  3. Simmer with spices
    Add the crushed cardamom pods and the cinnamon stick to the tea. Continue to simmer the tea on low heat for another 5-7 minutes to allow the flavors to infuse properly.

  4. Add milk
    Slowly add 2 cups of whole milk to the tea concentrate. Simmer the mixture for 10-15 minutes, ensuring the milk blends well and the tea becomes rich and creamy.

  5. Add salt or sugar
    For a traditional Kashmiri Noon Chai, add a pinch of salt. For a sweeter version, add sugar according to taste. Both versions are enjoyed in Kashmir.

  6. Strain and serve
    Strain the tea into cups, discarding the tea leaves and spices. Garnish with crushed almonds and pistachios for an authentic touch.

  7. Enjoy
