- 4 medium-sized potatoes (boiled and mashed)
- 1 medium onion (finely chopped)
- 2 green chilies (finely chopped)
- 1 teaspoon cumin seeds (zeera)
- 1 teaspoon red chili flakes
- 1 teaspoon coriander powder
- ½ teaspoon turmeric powder
- 1 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves (chopped)
- 1 tablespoon lemon juice

- 2 cups all-purpose flour (maida)
- 1 tablespoon oil
- ½ teaspoon salt
- Water (as needed to knead the dough)
3.2: For Assembling:
- Oil for frying
- 1 egg (beaten for coating)
- Bread crumbs (for coating)

Step 1: Prepare the Dough
- In a large bowl, mix all-purpose flour, oil, and salt.
- Gradually add water and knead until you get a soft and smooth dough.
- Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
Step 2: Make the Potato Filling
- Heat a tablespoon of oil in a pan and add cumin seeds.
- Once they start to splutter, add chopped onions and sauté until golden brown.
- Add green chilies, turmeric powder, coriander powder, red chili flakes, and salt. Cook for 2-3 minutes.
- Now add mashed potatoes and mix well, ensuring all spices are evenly combined.
- Stir in fresh coriander leaves, garam masala, and lemon juice. Cook for another 2 minutes and remove from heat. Let the filling cool.
Step 3: Roll Out the Dough
- Divide the dough into small equal portions and roll each one into a thin oval or rectangular shape.
- Place a generous amount of the potato filling in the center of the rolled dough.
- Roll it tightly, sealing the edges with a little water to ensure the filling doesn't spill out.
Step 4: Coat and Fry the Rolls
- Dip each roll in beaten egg, then coat it evenly with bread crumbs.
- Heat oil in a deep frying pan over medium heat.
- Fry the rolls until they are golden brown and crispy, ensuring they are cooked evenly on all sides.
- Remove the rolls from the oil and place them on a paper towel to absorb excess oil.
Step 5: Serve
Serve these crispy, delicious potato rolls with ketchup, green chutney, or your favorite dip.
