  • 4 medium-sized potatoes (boiled and mashed)
  • 1 medium onion (finely chopped)
  • 2 green chilies (finely chopped)
  • 1 teaspoon cumin seeds (zeera)
  • 1 teaspoon red chili flakes
  • 1 teaspoon coriander powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves (chopped)
  • 1 tablespoon lemon juice

3.1: For the Dough:

  • 2 cups all-purpose flour (maida)
  • 1 tablespoon oil
  • ½ teaspoon salt
  • Water (as needed to knead the dough)

3.2: For Assembling:

  • Oil for frying
  • 1 egg (beaten for coating)
  • Bread crumbs (for coating)

Step 1: Prepare the Dough

  1. In a large bowl, mix all-purpose flour, oil, and salt.
  2. Gradually add water and knead until you get a soft and smooth dough.
  3. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.

Step 2: Make the Potato Filling

  1. Heat a tablespoon of oil in a pan and add cumin seeds.
  2. Once they start to splutter, add chopped onions and sauté until golden brown.
  3. Add green chilies, turmeric powder, coriander powder, red chili flakes, and salt. Cook for 2-3 minutes.
  4. Now add mashed potatoes and mix well, ensuring all spices are evenly combined.
  5. Stir in fresh coriander leaves, garam masala, and lemon juice. Cook for another 2 minutes and remove from heat. Let the filling cool.

Step 3: Roll Out the Dough

  1. Divide the dough into small equal portions and roll each one into a thin oval or rectangular shape.
  2. Place a generous amount of the potato filling in the center of the rolled dough.
  3. Roll it tightly, sealing the edges with a little water to ensure the filling doesn't spill out.

Step 4: Coat and Fry the Rolls

  1. Dip each roll in beaten egg, then coat it evenly with bread crumbs.
  2. Heat oil in a deep frying pan over medium heat.
  3. Fry the rolls until they are golden brown and crispy, ensuring they are cooked evenly on all sides.
  4. Remove the rolls from the oil and place them on a paper towel to absorb excess oil.

Step 5: Serve
Serve these crispy, delicious potato rolls with ketchup, green chutney, or your favorite dip.
