Crispy, Juicy & Spicy Street-Style Chicken at Home

Crispy Fried Chicken with Fries and Ketchup |
- 1 kg of chicken (with skin or boneless)
- 1 cup of buttermilk or yogurt
- 2 tablespoons of ginger garlic paste
- 1 tablespoon of red chili powder
- 1 teaspoon of black pepper
- salt to taste
- 1 tablespoon of soy sauce
- 1 tablespoon of vinegar
- 2 tablespoons of lemon juice
- 1/2 cup of cornflour
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- Paprika – 1 tsp (optional for color)
- Chaat Masala – for sprinkle
- Oil – for deep frying
Instructions:
To marinate the chicken, combine it with yogurt, ginger garlic paste, red chili powder, black pepper, salt, soy sauce, vinegar, and lemon juice in a bowl.Stir thoroughly and allow it to marinate for a minimum of 4 hours or preferably overnight for enhanced flavor.
For the coating, blend flour, cornflour, baking powder, paprika, and a small amount of salt in a separate bowl.
Double Coating for a Crunchy Texture:
Begin with marinated chicken and first coat it in a dry flour mixture.
Next, dip it back into the remaining marinade (or cold water) and then coat it once more in the flour mixture.
To enhance crispiness, press the flour onto the chicken using your hands.
Frying:
Heat oil over medium heat. Deep fry the chicken pieces until they are golden brown and thoroughly cooked inside (approximately 8–10 minutes, depending on thickness). Be sure not to overcrowd the pan.
Suggestion:
Garnish with chaat masala and serve immediately alongside garlic mayonnaise, ketchup, and fries.
