Murgh Cholay is a cherished curry in the Lahori style, combining succulent chicken pieces with soft chickpeas cooked in a flavorful, spiced gravy. This 

traditional Pakistani dish is filled with vibrant flavors, making it ideal for a weekend brunch or a satisfying dinner. Accompanied by naan or rice, it represents the true essence of comforting desi home cooking.

📝 Ingredients | اجزاء

For Chicken Gravy (مرغی کا مصالحہ):

  • Chicken – ½ kg (with bones) | مرغی – آدھا کلو (ہڈی والی)

  • Onion – 2 medium (finely chopped) | پیاز – 2 عدد (باریک کٹی ہوئی)

  • Tomatoes – 2 medium (chopped) | ٹماٹر – 2 عدد (کٹے ہوئے)

  • Ginger Garlic Paste – 1 tbsp | ادرک لہسن کا پیسٹ – 1 کھانے کا چمچ

  • Yogurt – 3 tbsp | دہی – 3 کھانے کے چمچ

  • Red Chili Powder – 1 tsp | لال مرچ پاؤڈر – 1 چائے کا چمچ

  • Turmeric Powder – ½ tsp | ہلدی – آدھا چائے کا چمچ

  • Coriander Powder – 1 tsp | دھنیا پاؤڈر – 1 چائے کا چمچ

  • Garam Masala Powder – ½ tsp | گرم مصالحہ – آدھا چائے کا چمچ

  • Salt – to taste | نمک – حسب ذائقہ

  • Oil – ½ cup | تیل – آدھا کپ

For Chickpeas (چھولے):

  • Boiled Chickpeas – 1.5 cup | اُبلے ہوئے چھولے – ڈیڑھ کپ
  • Baking Soda – ¼ tsp (for boiling) | بیکنگ سوڈا – چوتھائی چائے کا چمچ (ابلتے وقت)

👨‍🍳 Cooking Instructions | بنانے کا طریقہ

Step 1: Preparing Chickpeas (چھولے ابالنا)

Soak white chickpeas in water overnight.

The following day, boil them with a small amount of baking soda and salt until they are tender. Set aside.

Step 2: Chicken Masala Preparation (مرغی کا مصالحہ)
Heat oil in a pan. Add chopped onions and fry until they turn golden brown.

Incorporate ginger garlic paste and sauté for 1 minute.

Introduce chicken and fry until it changes its color.

Next, add chopped tomatoes, red chili, turmeric, coriander powder, and salt. Stir well.

Cover the pan and cook for 10–12 minutes on a low flame.

Add yogurt and continue cooking until the oil separates from the masala.

Step 3: Combine Chickpeas with Chicken (چھولے اور مرغی ملانا)
Add boiled chickpeas to the chicken gravy.

Pour in 1 cup of warm water, mix, and allow it to simmer for 10–15 minutes on low heat.

Sprinkle garam masala at the end and mix thoroughly.

Fresh Coriander – chopped | تازہ دھنیا – کٹا ہوا

Green Chilies – sliced | ہری مرچ – لمبی کٹی ہوئی

Ginger – julienned | ادرک – باریک لمبی کٹی ہوئی
