| Pakistani White Karahi. |
H.1.2: Introduction: White Karahi is a popular and delightful dish from Pakistan, known for its rich, creamy texture and aromatic flavors. Unlike the traditional Karahi, this version does not use tomatoes or red chili, making it unique and mild yet incredibly flavorful. This recipe will guide you through creating an authentic White Karahi that will surely be a hit at your dinner table.
H.2: Ingredients:
- Chicken: 1 kg (cut into medium-sized pieces)
- Yogurt: 1 cup (whisked)
- Fresh Cream: 1/2 cup
- Ginger Paste: 1 tablespoon
- Garlic Paste: 1 tablespoon
- Green Chilies: 6-8 (slit lengthwise)
- Black Pepper: 1 teaspoon (coarsely ground)
- White Pepper: 1 teaspoon
- Garam Masala Powder: 1 teaspoon
- Coriander Powder: 1 teaspoon
- Salt: To taste
- Cooking Oil: 4 tablespoons
- Fresh Coriander: For garnish (chopped)
- Lemon Juice: 2 tablespoons
- Ginger: For garnish (julienned)
H.3: Instructions:
Preparation:
- Begin by heating oil in a large Karahi or wok over medium heat. Add the ginger and garlic paste, sauté until golden and fragrant.
Cooking the Chicken:
- Add the chicken pieces to the Karahi and fry until they turn light golden. This step ensures that the chicken retains its moisture and absorbs the flavors.
Incorporating Spices:
- Once the chicken is fried, add black pepper, white pepper, coriander powder, and salt. Stir well to coat the chicken evenly with the spices.
Adding Yogurt and Cream:
- Lower the heat and slowly add the whisked yogurt to the chicken, stirring continuously to avoid curdling. Cook for about 5-7 minutes until the yogurt is fully incorporated and the oil begins to separate.
- Now, add the fresh cream and mix well. The cream adds a rich texture to the dish, making it luxuriously creamy.
Final Touches:
- Add slit green chilies and garam masala powder. Cover the Karahi and let it simmer on low heat for 15 minutes, allowing all the flavors to meld together.
Garnishing:
- Once the chicken is tender and the gravy has thickened to your desired consistency, turn off the heat. Squeeze fresh lemon juice over the dish and garnish with chopped coriander and julienned ginger.
Serving:
- Serve the White Karahi hot with naan or steamed rice. The subtle spices and creamy texture make it a perfect dish for any occasion.
