H.2: Ingredients:
- Suji (Semolina) - 1 cup
- Ghee (Clarified Butter) - 1/2 cup
- Sugar - 1 cup
- Water - 2 cups
- Green Cardamom - 4-5 pods (crushed)
- Almonds and Pistachios - 2 tablespoons (sliced)
- Raisins - 1 tablespoon
- Saffron - a pinch (optional)
- Silver leaf, (Chandi ka warq) - for garnish (optional)
H.3: Instructions:
Prepare the Ingredients:
- Crush the green cardamom pods.
- Slice the almonds and pistachios.
- If using saffron, soak it in a tablespoon of warm water.
Roast the Semolina:
- In a heavy-bottomed pan, heat the ghee on medium flame.
- Add the suji (semolina) and roast it until it turns golden brown and emits a fragrant aroma. Stir continuously to avoid burning.
Prepare the Sugar Syrup:
- In a separate pan, bring the water to a boil.
- Add the sugar and crushed green cardamom to the boiling water. Stir until the sugar dissolves completely.
Combine the Ingredients:
- Slowly pour the sugar syrup into the roasted semolina, stirring constantly to prevent lumps from forming.
- Add the soaked saffron (if using) along with the water.
Cook the Halwa:
- Continue to cook on medium heat, stirring continuously, until the mixture thickens and the ghee starts to separate from the halwa.
- Add the sliced almonds, pistachios, and raisins. Mix well.
Serve:
- Transfer the halwa to a serving dish.
- Garnish with additional nuts, saffron strands, and silver leaf (if using).
- Serve hot and enjoy.
