- 500g chicken (bone-in pieces)
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 cup yogurt (whisked)
- 2 tbsp gram flour (besan)

- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp fenugreek seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chili powder (adjust to taste)
- 1 tbsp ginger garlic paste
- Salt to taste
- Fresh coriander leaves (for garnish)
- 4-5 green chilies, slit

- 1 medium onion, finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander seeds (crushed)
- ½ tsp red chili powder

Step 1: Preparing the Pakoras
- Make the batter: In a mixing bowl, combine gram flour, chopped onion, cumin seeds, coriander seeds, red chili powder, turmeric powder, and salt. Gradually add water to form a thick, smooth batter.
- Fry the pakoras: Heat oil in a deep frying pan. Drop small portions of the batter into the hot oil using a spoon. Fry the pakoras until they are golden brown and crispy. Set aside on paper towels to drain excess oil.
Step 2: Cooking the Chicken Gravy
- Heat oil and temper spices: In a large pot, heat 4 tablespoons of oil. Add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter for a few seconds to release their aroma.
- Sauté onions: Add chopped onions and cook until golden brown.
- Add ginger garlic paste: Stir in ginger garlic paste and sauté for a minute until fragrant.
- Tomatoes and spices: Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes break down and the oil starts separating from the mixture.
- Add chicken: Add the chicken pieces and cook on medium heat until the chicken changes color and is partially cooked.
- Gram flour and yogurt mixture: In a separate bowl, whisk together the gram flour and yogurt to form a smooth mixture. Gradually add this to the chicken while stirring continuously to avoid lumps.
- Simmer: Add 2 cups of water to the pot and bring the mixture to a boil. Once it starts boiling, reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.
