Pakistani Khoya Kulfi
Ingredients:
- 1 liter full-fat milk
- 250 grams khoya (mawa)
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 1/4 cup crushed almonds and pistachios
- 1 tablespoon rose water (optional, for added fragrance)
- Kulfi molds or small cups
- Crushed pistachios and almonds for garnish
Instructions:
Prepare the Milk Base:
- In a large, heavy-bottomed pan, bring the full-fat milk to a boil. Stir occasionally to prevent burning.
- Once the milk starts boiling, lower the heat to medium and let it simmer. Keep stirring occasionally as the milk thickens. This step should take around 30-40 minutes.
Add Khoya:
- Once the milk has reduced to about half its original quantity, crumble the khoya and add it to the pan. Mix it well so that the khoya dissolves completely into the milk.
- Continue to stir the mixture on low heat for another 10-15 minutes until it thickens further.
Flavoring the Kulfi:
- Add the sugar to the mixture and stir until fully dissolved.
- Add cardamom powder for a sweet aroma and the crushed almonds and pistachios for a nutty texture.
- Stir in the rose water for a traditional Pakistani touch.
Cooling the Mixture:
- Turn off the heat and allow the mixture to cool to room temperature.
- Once the mixture has cooled, pour it into Kulfi molds or small cups.
Freezing the Kulfi:
- Cover the molds or cups with aluminum foil and insert a stick in the center of each.
- Freeze the Kulfi for at least 6-8 hours or overnight for best results.
Serving:
- Once the Kulfi is fully frozen, remove it from the molds by running warm water over them for a few seconds.
- Garnish with crushed pistachios and almonds before serving.
Tips for Perfect Khoya Kulfi:
- Slow Cooking: Be patient when reducing the milk. This slow process ensures a rich and creamy kulfi.
- Cornflour: Adding cornflour helps in giving the kulfi a smooth texture, but it’s optional.
- Flavors: You can also experiment with flavors like mango, strawberry, or chocolate to create unique variations of this classic recipe.
Conclusion:
Pakistani Khoya Kulfi is a delightful dessert that’s both rich and refreshing. The combination of thickened milk, khoya, and aromatic cardamom creates a deliciously authentic treat. This easy-to-follow recipe will help you make a perfect, creamy kulfi at home, ideal for serving during festive occasions or hot summer days.
