  • Yogurt: ¼ cup (whisked)
  • Green chilies: 3-4 (slit)
  • Cumin seeds (Zeera): 1 teaspoon
  • Coriander powder: 1 teaspoon
  • Red chili powder: 1 teaspoon (adjust to taste)
  • Turmeric powder (Haldi): ½ teaspoon
  • Salt: To taste
  • Garam masala: ½ teaspoon
  • Fresh coriander: 2 tablespoons (chopped)
  • Cooking oil: ½ cup

  1. Prepare the Bhindi:
    Heat 2 tablespoons of oil in a frying pan and lightly fry the bhindi (okra) until they are slightly golden and no longer sticky. Set aside.

  2. Cook the Mutton:
    In a large pot, heat the remaining oil and add cumin seeds. Once they start to crackle, add sliced onions and sauté until golden brown.

  3. Add Ginger Garlic Paste:
    Add ginger garlic paste to the browned onions and cook for a minute until fragrant.

  4. Spice it Up:
    Now, add the chopped tomatoes, coriander powder, red chili powder, turmeric, and salt. Cook on medium heat until the tomatoes soften and the oil separates from the masala.
