Zarda is a luxurious and fragrant dessert from Pakistan, featuring sweet rice infused with saffron, complemented by dried fruits and khoya. This colorful dish is a favorite at weddings, celebrations, and festive events. Renowned for its vivid yellow hue and rich flavors, Zarda is cherished for its delightful combination of sweetness and texture.


In this guide, we will take you through a detailed, step-by-step process to create restaurant-quality Zarda that is sure to delight your palate.

H; 3: Ingredients:


For Cooking Rice:  

- 2 cups Basmati rice (soaked for 30 minutes)  

- 6 cups water  

- 4-5 green cardamom pods  

- 1 cinnamon stick  

- 1/4 teaspoon yellow food coloring  


For Sugar Syrup:  

- 1.5 cups sugar (to taste)  

- 1/4 cup water  

- 1/4 teaspoon saffron strands (optional but suggested)  

- 1/2 teaspoon kewra water  


 For Flavor and Garnish:  

2 tablespoons of ghee (or butter)  

1/2 cup of crumbled khoya  

1/4 cup of sliced almonds  

1/4 cup of sliced pistachios  

1/4 cup of chopped cashews  

1/4 cup of raisins  

4 to 5 cloves  

H; 4: Step-by-Step Recipe:


Step 1: Prepare the Rice;

Begin by bringing 6 cups of water to a boil in a large pot. Incorporate green cardamoms, a cinnamon stick, and a pinch of yellow food coloring. Once the water reaches a rolling boil, introduce the soaked Basmati rice and cook until it is about 80% cooked, ensuring the rice retains a slight firmness. Drain the rice and set it aside.  


Step 2: Make the Sugar Syrup;

In a separate pot, combine sugar with 1/4 cup of water. Heat over medium flame, stirring until the sugar has completely dissolved.

Incorporate saffron strands (if desired) and kewra water to enhance the fragrance. Mix thoroughly and then turn off the heat.  

Step 3: Assemble the Zarda;

In a large pot, melt ghee over a low flame. Add cloves and sauté for a few seconds until they release their aroma.  

Gently fold in the cooked rice.  

Evenly drizzle the prepared sugar syrup over the rice.  

Add crumbled khoya, along with almonds, pistachios, cashews, and raisins.  

Cover the pot with a tight-fitting lid and allow it to cook on low heat (dum) for 10-15 minutes, until the sugar is absorbed and the rice is completely cooked.


After completing the cooking process, gently fluff the rice with a fork to ensure an even distribution of ingredients.  

Step 4: Serve & Savor!  

Before serving, add a garnish of additional nuts and khoya. Serve warm and relish this exquisite Pakistani dessert!
