1 kg bone-in mutton or beef (cut into sizable chunks)  

8 cups water  

1 large onion (sliced)  

4 garlic cloves  

1 piece of ginger measuring 1 inch  

2 bay leaves  

1. stick of cinnamon  

3 to four cloves  

5 Three to four green cardamom pods  

1 black cardamom pod  

1 teaspoon of black peppercorns  

1 teaspoon of salt  


For the Rice:


Three cups of basmati rice (soaked for 30 minutes).  

1. ¼ cup of oil or ghee  

1 large onion, thinly sliced  

2 medium tomatoes, chopped  

1 tablespoon of tomato paste  

1 teaspoon of red chili powder  

½ teaspoon of turmeric powder  

1 teaspoon of cumin seeds  

1 tablespoon of coriander powder  

½ teaspoon of black pepper powder  

2 medium carrots, grated  

½ cup of raisins  

½ cup of blanched and sliced almonds  

Salt, to taste.

Step 1: Create the Meat Stock:

In a large pot, combine the meat, water, onion, garlic, ginger, bay leaves, cinnamon, cloves, cardamom, peppercorns, and salt.  

Bring the mixture to a boil, then lower the heat and allow it to simmer for 60 to 90 minutes, or until the meat becomes tender.  

Strain the stock and set it aside, discarding the whole spices along with the meat.  


Step 2: Prepare the Rice:

In a spacious pot, heat oil or ghee and sauté the sliced onions until they turn a rich golden brown.

Incorporate tomatoes and tomato paste, allowing them to cook until they become tender. Blend in red chili powder, turmeric, cumin seeds, coriander powder, and black pepper. Introduce the cooked meat and mix thoroughly to ensure it is well-coated with the spices.
