Rainbow Veggie Cheese Sandwich😋

A grilled rainbow veggie cheese sandwich with a heart cutout on golden toast, served with ketchup and fun-shaped toasted bread pieces for kids.

The Rainbow Veggie Cheese Sandwich! Bursting with flavors and essential nutrients, this sandwich is an excellent way to incorporate vegetables into your child's meals effortlessly.

Ingredients:

  • 4 slices of multigrain or white bread,
  • 1/4 cup of grated carrots,
  • 1/4 cup of finely chopped red cabbage,
  • 1/4 cup of boiled sweet corn,
  • 1/4 cup of finely chopped bell peppers (red green, yellow),
  • 1/4 cup of mayonnaise,
  • 2 tablespoons of cream cheese or grated mozzarella,
  • salt and pepper to taste,
  • butter for toasting.

Instructions:

  • In a mixing bowl, combine all the vegetables, mayonnaise, cream cheese, salt and pepper.
  • Take two slices of bread and apply butter to one side of each, On the unbuttered side of one slice, spread the vegetable and cheese mixture.
  • Place the other slice on top, ensuring the buttered side is facing outward.
  • Cook in a skillet until the bread is golden brown and crispy.
  • Use cookie cutters to cut the sandwich into fun shapes that will appeal to children.
