Karachi biryani, known for its rich flavors and aromatic spices, is a favorite dish across Pakistan. This version of biryani is prepared with fragrant basmati rice, tender meat, and a blend of traditional spices, making it a must-try for biryani lovers. Follow this authentic recipe to create an irresistible Karachi biryani that will make your taste buds dance!


H; 3: Ingredients:

  • Basmati rice: 500g (soaked for 30 minutes)
  • Chicken or mutton: 1 kg (cut into pieces)
  • Onions: 3 large (thinly sliced)
  • Tomatoes: 3 medium (chopped)
  • Yogurt: 1 cup
  • Potatoes: 3 medium (peeled and halved)
  • Green chilies: 4-6 (slit)
  • Garlic paste: 1 tablespoon
  • Ginger paste: 1 tablespoon
  • Biryani masala: 3 tablespoons (store-bought or homemade)
  • Cumin seeds: 1 teaspoon
  • Cinnamon stick: 1 piece
  • Green cardamoms: 4-5
  • Cloves: 4-5
  • Black peppercorns: 6-8
  • Bay leaves: 2
  • Fresh coriander: ½ cup (chopped)
  • Fresh mint: ½ cup (chopped)
  • Saffron: A pinch (soaked in ¼ cup of milk)
  • Salt: To taste
  • Ghee or oil: ½ cup
  • Lemon juice: 2 tablespoons

H; 4: Instructions:

Step 1: Prepare the Rice

  1. In a large pot, bring water to a boil. Add salt, cumin seeds, cinnamon, green cardamoms, cloves, black peppercorns, and bay leaves.
  2. Add soaked basmati rice and cook until 70% done (al dente). Drain the water and set the rice aside.

Step 2: Fry the Potatoes

  1. Heat some oil in a pan and fry the halved potatoes until golden brown. Set them aside.

Step 3: Cook the Meat

  1. In a large pot, heat ghee or oil. Add sliced onions and sauté until golden brown.
  2. Add garlic and ginger paste and cook for 2 minutes.
  3. Add chicken or mutton pieces and cook until the meat changes color.
  4. Mix in the chopped tomatoes, yogurt, green chilies, biryani masala, and salt. Cook for 10-15 minutes until the meat is tender and oil separates from the masala.
  5. Add the fried potatoes to the meat mixture and mix well.

Step 4: Layering the Biryani

  1. In a large pot, start layering by adding half of the cooked rice at the bottom.
  2. Pour the meat mixture over the rice.
  3. Sprinkle chopped coriander, mint leaves, and half of the saffron milk over the meat.
  4. Top with the remaining rice and drizzle the rest of the saffron milk.
  5. Squeeze lemon juice on top and seal the pot with a tight-fitting lid.

Step 5: Dum (Steaming)

  1. Place the pot on low heat and cook on dum (steam) for 20-25 minutes, allowing the flavors to blend beautifully.

Step 6: Serve

  1. Gently mix the biryani before serving to ensure even distribution of the meat and rice.
  2. Garnish with extra mint and coriander leaves if desired.
  3. Serve hot with raita and salad.

  • For a richer taste, you can add a few drops of kewra water during layering.
  • You can adjust the spice level by adding more or fewer green chilies.
